Mushroom Frittata

An Italian classic, a frittata is (in our minds) basically a crustless quiche. We love how simple this recipe is and that it can be so easily tweaked to make it your own!

 

 

 

 

You Will Need:

10 large eggs

7oz feta cheese, cubed

4-5 spring onions

2 chili peppers

15-20 cherry tomatoes

10oz button mushrooms

3 bell peppers

7oz spinach

Salt and pepper to taste

Oil for frying

 

 

 

 

 

First, prepare your Breeo Smoke Less fire pit. Add some small dry branches and start the fire. Add a couple of hardwood logs and let the fire burn for about 15-20 minutes. Position the grill grate to about 3 inches above the flame to allow it to heat while you prepare your ingredients.

Wash and slice all veggies and set aside. Whisk eggs in a large bowl and season with some salt and pepper. Add cubed feta and mix well again.

 

 

 

 

 

 

 

Grease a large cast iron pan with some olive oil and place on the grill. Add sliced peppers and chili peppers. Briefly cook for 2-3 minutes and add sliced mushrooms. Season with some salt and pepper to taste and cook for another 2-3 minutes. Now add cherry tomatoes and mix all well. If necessary, add some more olive oil and continue to cook until tomatoes have completely softened. Add spinach and cook until wilted. Mix all well and optionally season with some more salt or pepper to taste.

 

 

 

 

Finally, add eggs and cook until set. Remove from the grill and sprinkle with spring onions.  Serve immediately.
